My Dad would always bring us back Lebkuchen from the German Market at Christmas and I love it so much. This year, I decided to have a go at making my own.
My Dad would always bring us back Lebkuchen from the German Market at Christmas and I love it so much. This year, I decided to have a go at making my own.
Grate the lemon zest in to a bowl.
Melt the butter together with the honey in a saucepan over a medium heat.
Add the flour, ground almonds, baking soda, baking powder and spices in to a bowl.
Pour in the melted butter and mix together until a thick dough forms.
Roll out the mixture and cut out shapes with a cookie cutter.
Place on a baking tray and bake for 15 minutes at 180'C.
Leave to cool.
Beat the egg white and mix in the icing sugar to form a thick icing. Brush the tops of the cookies with icing and sprinkle with edible decorations or glitter.
