This is a take on a classic Prohibition-era cocktail of gin, honey, and lemon juice. Initially, it was created to mask the dubious quality of the liquor of the day. This version brings the glorious lavender-infused gin to the fore, with the honey and lavender working extremely well together.

Tools: Cocktail shaker with strainer
Glass: Martini
Ice: Cubes
Garnish: Lavender sprig

You Will Need (4 things)

  • ¾ oz Honey Simple Syrup (see below)
  • ½ oz Freshly squeezed Lemon Juice
  • 2 oz Lavender Gin (see http://www.cutoutandkeep.net/projects/lavender-gin)
  • Lavender sprig

Steps (2 steps, 25 minutes)

    Lavender Bee’s Knees

    Add all the ingredients to the cocktail shaker and fill it two-thirds of the way up with ice. Cover and shake hard for 20 seconds, then strain the contents of the shaker into the glass. Garnish with the sprig of lavender.

    The type of honey and where it was produced will affect the taste, so, although you may use exactly the same proportions, your Lavender Bee’s Knees will taste different from mine. But it should still be delicious.

    Honey Simple Syrup

    Honey is a fantastic ingredient, both for the flavor of the flowers, on which the bees have been gorging, and for its health-giving properties. It is too thick to use on its own, so simply combine equal parts honey and water, and heat until the honey is thoroughly dissolved to give a delicious floral simple syrup.
