Lavender & Honey Creme Brulee
A gin, lavender and honey infused creme brûlée!

This creamy lavender and honey creme brûlée is infused with Caorunn Gin for the perfectly indulgent dessert.

You Will Need (8 things)
- 250 ml Double Cream
- 75 ml Soya Milk
- 1 tbsp Honey
- 1 tsp Vanilla Extract
- 1 tbsp Culinary Lavender
- 2 tbsp Caorunn Gin
- 4 Egg Yolks
- 3 tbsp Sugar
Steps (11 steps, 45 minutes)

Heat the cream, milk, vanilla, honey and lavender in a sauce pan until boiling.

Remove from the heat, add the gin and cover.

Place the eggs and sugar in a bowl.

Whisk until light and fluffy.

Pour in the cream mixture and stir well.

Pour the mixture into six small ramekins and place in a baking tray.

Carefully fill the baking tray with hot water, making sure not to get any in the puddings.

Bake the puddings for 20 minutes at 140'C. Leave to chill.

Sprinkle the top of each pudding with a little sugar.

Use a blow torch, or the grill on your oven, to caramelise the sugar in to a hard topping.
