You Will Need (18 things)

  • For the waffle:

  • 4 Large Eggs
  • 1 Large ripe Banana
  • 240 ml Full-fat Coconut Milk
  • 5 tbsp Coconut Oil , warmed if solid
  • 2 tsp Vanilla Extract
  • 2 tbsp Date Syrup
  • 60 g Coconut Flour
  • 90 g Potatoe Flour
  • 2 tsp Ground Cinnamon
  • 1 tsp Sea Salt
  • Melted Coconut Oil (to grease waffle iron)
  • For the cinnamon syrup:

  • 4 tbsp Coconut Oil , warmed if solid
  • 4 tbsp Date Syrup
  • 2 tsp Vanilla Extract
  • 2 tsp Ground Cinnamon
  • Sliced Bananas

Steps (5 steps, 15 minutes)

    To make waffles, combine all waffle ingredients in a blender and blend until smooth. Allow the batter to sit for about 10 minutes and then blend again for about 3 seconds before using.

    Coat your waffle iron with a little bit of coconut oil to prevent everything from sticking.

    Pour enough batter to cover the bottom of the waffle maker, close and cook until light brown.

To make the cinnamon syrup, melt all topping ingredients together in a small saucepan and stir until combined. Cook until thickened.

Drizzle over waffles and top with sliced bananas (optional).
