Kulfi Stuffed Mango
Serve an innocent mango for dessert and when you slice it open see the look of wonder on your guests' face !!

Kulfi is and Indian frozen dessert. It is close to Ice Cream but denser as it is made of full fat milk and cream.
Hollow out a mango.
Make Rabri (kulfi liquid)
Stuff the mango with the rabri and freeze.

You Will Need (1 thing)
- Milk
Steps (12 steps, 1440 minutes)

Bring half a liter of milk to a boil. Reduce the heat to low and let the milk thicken reduce to half the quantity.

Keep stirring to prevent burning and keep scraping the sides.

Take 2 tbs of the hot milk in a bowl and add a few strands of saffron to it.

Keep it aside till it releases colour

Add a tin (400 ml) of condensed milk

Add 1/4 cup (more or less, as per taste) of sugar and dissolve.
As the sugar dissolves the rabri becomes watery. Heat while stirring for another 10 min till you get the a thinner consistency as that of the condensed milk that you added.

Pound a handful of pistachios to coarse powder.

Dry roast the powder with a pinch of cardamom for 2-3 min.
Let it cool.

Add 1 big tsp of cardamom powder to the rabri.

Add a spoon of rosewater essence.

Add the cooled pista powder and mix everything well. let the rabri cool.
We have prepared a kesar pista kulfi. You can look up recipes for any other kulfi or buy a readymade kulfi mix. that will work too. -
