This is smooth & creamy. It is best made the day before needed. You can add or leave off the icing topping but it does ad that special something to the cheesecake.
This is smooth & creamy. It is best made the day before needed. You can add or leave off the icing topping but it does ad that special something to the cheesecake.
Mix the base ingredients together. Press into a tin. Bake in oven 350/180 degrees for 5 mins. Remove & set aside.
Mix cheese & sugar together.
Add vanilla, lime juice & eggs. Mix til smooth.
Pour on top of base. Cook for approx 1 hr until set.
Remove from oven & allow to cool. Place in fridge until needed but best over night.
Make the icing... Mix the cream cheese & butter together.
Add the icing sugar. 1/2 a cup at a time. Beat well between addition.
Add the lime juice. Stir to combine.
Spread over the cheesecake. Smooth out.
Cut & serve.
