Best left to marinade overnight but a few hours will do the trick.

You Will Need (19 things)

  • 1 lb Chicken Breast
  • 1/4 cup Orange Juice
  • 1 Onion Chopped
  • 4 cloves Garlic Grated
  • 1 Jalapeño Grated
  • 1/4 inch Ginger Grated
  • 1 t. salt
  • 1 tsp Black Pepper
  • 2 tsp Paprika
  • 2 tsp Thyme
  • 1 tsp Mixed Spice
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Nutmeg
  • 1 tbsp Soya Sauce
  • 2 tbsp Honey
  • 3 tbsp Lime Juice
  • 2 Bay Leaves
  • 1/2 cup Olive Oil
  • 1/2 tsp Cinnamon

Steps (4 steps, 50 minutes)

    Mix together orange juice, onion, garlic, ginger, jalapeño, salt, pepper, paprika,, thyme, mixed spice, cayenne, nutmeg, honey, soya sauce, lime juice

    Add chicken to the sauce/marinade.

    Leave as long as possible but best overnight.

    Heat oven 200/400 degrees.

    Place chicken on tray.

    Bake for 30-40 minutes until cooked through.

    Serve with Jamaican rice and peas.
