Broccolini, also known as tenderstem broccoli, is a great Broccoli variant with long, thin stalks that look and taste great when paired with the holy trinity of garlic, lemon and parmesan! The toasted pine nuts add a final flourish, but any type of nut, or even some breadcrumbs toasted in olive oil, would also work as a great topping.

Steam the broccolini stalks over boiling water until just tender and bright green - about 3-4 minutes. Once it's cooked, plunge the broccolini into ice cold water, or run under cold running water in a sieve. This is to stop the greens cooking any further.
Heat the olive oil and butter in a large frying pan, then add the garlic for 20 seconds, then add the broccolini. Toss the veg well in the hot oil to warm it through for 1-2 minutes, adding a pinch of salt and pepper and the lemon juice. Finally, pile the Broccolini onto a serving platter, and top with grated parmesan cheese and the toasted pine nuts.
