I saw this recipe on the food network but I modified it so I could use what I had. The original recipe calls for a ham hock and is called Colcannon.
Start by boiling your potatoes (cut them up first though, I did half moons).
Cut up the bacon and throw it in another pot and start cooking it on med-low heat. If you like it crispy make it crispy if not then don't, I like it kinda chewy.
Chop up your cabbage into bite sized pieces and throw it in with the bacon and bacon grease. Place a lid on top and allow the cabbage to steam cook. Stir occasionally from the bottom up so it doesn't burn.
When your potatoes are cooked through and fork tender, drain, and mash them. I always add milk and butter but you don't have to if you don't want it.
Add salt and pepper to the cabbage according to your taste. Spoon over mashed potatoes and enjoy! Yum!
