Snip and gently rinse and dry about 20 large leaves of mixture of mint and lemon balm leaves.
Brew a pot, or about 1/2 gallon, of tea. Allow the tea to cool for about 15 minutes. The tea should still be very warm. Add the cooled tea to a one (1) gallon pitcher.
Add 3-4 tablespoons of rose syrup to the warm tea. Use a whisk to blend.
Add the remaining half gallon of tap cool water to the tea and rose mixture. Add the mint and lemon balm and mix gently.
Chill the tea in the refrigerator. Serve over ice.
