I always loved Ice Tea, especially homemade Ice Tea. This probably was one of the first things I learned to "cook"... Today I'm sitting at university and am pretty worried by the fact, that there are some people, students by the way, who don't even know, that normal iced tea is made from black tea, lemon juice and sugar. And nothing else... (I take the lemon peels too, for better taste) Well, it's not a big surprise, that most people don't drink homemade Ice Tea, because you have to brew up the tea and then let it cool down again, which is boring and time-killing. But there's an end with this silly excuse now!! :D

Instructions

    That's what you need. Plus water. I buy lemon juice, because it's difficult to estimate how many lemons you'd need for a certain amount of juice... For the peel you need a lemon for each bottle (or if you don't like it that strong, one lemon for 2 bottles... :D just try...) You can also omit the lemons if you want.

    Peel the lemons (take pesticide-free lemons therefore) you can peel with a normal knife or take this beautiful swiss invention :D called sth. like "spare-peeler", which enables you to make really thin slices without taking the white bitter part of the peel... press out the juice of the lemons, you can add it to the bought lemon juice (all in all 1/3 of the final liquid-amount)

    boil water, lemon peel and the sugar, stir well.

    Add the tea bags (for each cup of syrup add 6 Teabags, example: 1 liter of syrup = 30 tea bags) and let it steep for 3-5 minutes. Then remove the teabags (but try to keep the peel) and add all the lemon juice. Take the peel out with a tea strainer or sth. Reboil your syrup. Wash the bottles and distribute the peel to the bottles. Boil some water and sterilize the bottles (then pour out the hot water slowly through an inverted tea strainer to keep the peel in the bottles) Fill in the boiling syrup immediately (use a funnel) and close the bottles. That way you can keep your syrup for months (in a cool place)

    Finished!! Just take 1/6 syrup and 5/6 cold water (or the way you like it, I drink it 1:8) and you have your cold!!! homemade iced tea! You can also serve it with ice cream or soak a cake with it... Best: after you drank your syrup you can eat the peel, it's so delicious!!!
