You can use store bought or home made Icecream in these. I have a few Icecream recipes on my projects.

You will need

Cookies
1 1/4 cup Plain Flour 1/2 cup Cocoa 1/2 tsp Baking Powder 1/4 tsp Salt 6 tbsp Butter 1/2 cup Sugar 1/4 cup Brown Sugar 1 tsp Vanilla 2/3 cup Milk + 2 tbsp

Description

You can use store bought or home made Icecream in these. I have a few Icecream recipes on my projects.

Instructions

1. 

   Heat oven 175/350 degrees. Mix together flour, cocoa, salt & baking powder. Set aside.

2. 

   Beat he butter, sugars & vanilla together until creamy.

3. 

   Add half the flour mixture & the milk. Stir through.

4. 

   Add the remaining flour & stir to combine.

5. 

   Pour into a tin. Level out as much as possible.

6. 

   Bake for 10 mins until the mixture has just lost its shine. Cool completely.

7. 

   To assemble... Place the cookie on a work surface. Place the Icecream on top. Smooth out..

8. 

   Place the remaining cookies on top.

9. 

   Cut along the edges to make a neat finish. Cut into rectangle or square shape.

10. 

    Wrap in baking paper or serve.
