You can use store bought or home made Icecream in these.

I have a few Icecream recipes on my projects.

You Will Need (12 things)

  • Cookies

  • 1 1/4 cup Plain Flour
  • 1/2 cup Cocoa
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 6 tbsp Butter
  • 1/2 cup Sugar
  • 1/4 cup Brown Sugar
  • 1 tsp Vanilla
  • 2/3 cup Milk + 2 tbsp

  • Filling

  • Ice Cream

Steps (10 steps, 60 minutes)

    Heat oven 175/350 degrees.

    Mix together flour, cocoa, salt & baking powder.

    Set aside.

    Beat he butter, sugars & vanilla together until creamy.

    Add half the flour mixture & the milk.

    Stir through.

    Add the remaining flour & stir to combine.

    Pour into a tin.

    Level out as much as possible.

    Bake for 10 mins until the mixture has just lost its shine.

    Cool completely.

    To assemble...

    Place the cookie on a work surface.

    Place the Icecream on top.

    Smooth out..

    Place the remaining cookies on top.

    Cut along the edges to make a neat finish.

    Cut into rectangle or square shape.

    Wrap in baking paper or serve.
