Pre-heat your oven to 100 deg C (fan forced).
Peel the pineapple.
Using a sharp knife, cut the thinnest slices you can manage (use a mandoline if you have one).
Place the slices on a wire rack. Make a sugar sirup by bringing to the boil 1 table spoon of caster sugar with 1 table spoon of water. Using a pastry brush, brush each side of the pineapple slices with the sirup.
Dry in the oven for about an hour or until golden on the edges (thicker slices will take longer to dry). Immediatly remove the slices and place on the “towers” of an egg box to cool. They will harden while cooling and keep their shape.
