Smoking your own salmon is nice and simple, all you need is a smoking kit from Hot Smoked, some wood chips in any flavour you like, a side of salmon, brown sugar, sea salt and a nice mix of spices.

You Will Need (10 things)

  • 200 g Brown Sugar
  • 100 g Sea Salt
  • Side of Salmon
  • Star Anise
  • Peppercorns
  • Spices
  • Pink Peppercorns
  • Mortar & Pestle
  • Wood chips
  • Smoking Kit

Steps (7 steps, 600 minutes)

    Head to your local fishmonger and ask for a fresh side of salmon.

    Place a generous helping of peppercorns, pink peppercorns, star anise and spices in a mortar and pestle.

    Grind the spices to a fine dust.

  4. 4

    Mix together the brown sugar, spices and sea salt.

  5. 5

    Coat the salmon side in the salt and leave to dry out in the fridge overnight.

    Set up the smoking kit in a hooded BBQ and light the wood chips.

    Smoke the salmon for 10 hours and it's ready to serve and use in your recipes.
