These are my take on traditional hot cross buns. I added chocolate chips instead of the traditional fruit filling. They can be made large or smaller in size, what ever suits you. There seems a lot of work but the time is mostly spent waiting for the buns to prove & rise.

Mix dry ingredients together.
Heat milk & butter together. Allow to cool to hand hot temperature.
Make a well in the dry ingredients & pour in the milk & egg.
Mix until combined to a dough.
Place in a bowl & cover to prove for approx 2 hrs.
Once risen, kneed for a few mins & split into portions. Place onto an oiled tray & cover to prove once again.
Once risen (approx 1hr) remove the cover. Mix up the flour & water to make the crosses. Pipe onto the buns & place in oven 220/ gas 4. Cook for 15-18mins.
Make the glaze.... Place sugar & water in microwave for approx 1 minute.
Remove buns from over & brush with glaze.
Allow to cool before eating.
