A seasonal twist on the bread & butter pudding, this hearty dessert is layered with buttered hot cross buns, fruit doused in Lamb's Spiced Rum and sprinkles with lots of delicious spices and brown sugar.
A seasonal twist on the bread & butter pudding, this hearty dessert is layered with buttered hot cross buns, fruit doused in Lamb's Spiced Rum and sprinkles with lots of delicious spices and brown sugar.
Butter the bottom of each of your pie dishes.
Slice the tops off the hot cross buns and then slice the bottom of the bun in half again. Butter the tops of each slice and the underside of the cross top of the buns and place to the side for the moment.
Tear the first slice up and place in the bottom of your pie dish. Top with a handful of dried fruit and dust with brown sugar and cinnamon. Drizzle with a generous splash of rum.
Repeat the previous step with the second slice of bun.
Whisk together the egg and brown sugar until light and fluffy.
Gently heat the milk and cream together.
Pour the cream into the eggs.
Whisk together with two tablespoons of rum.
Pour the custard into your pie dishes and sprinkle with brown sugar and cinnamon. Leave to set for a little while.
Place the top of the hot cross buns on top of your puddings just before baking.
Bake in a hot oven at 180'C for 40 minutes and serve hot.
