This project almost didn’t happen because I ruined the first batch of caramel somehow and it crystalized like mad, so I ended up making a second batch and it came out (almost) perfect. This is caramel so you do have to be careful. If you turn your back on it for one minute you might as well be attending a Game of Thrones wedding, because it’s going to be that terrible and messy.

I don’t think that I need to tell you guys how to make popcorn. If I do leave me a comment and I’ll share some of my favorite popcorn recipes. Add in your peanuts, I toasted mine first, if you’re using them.
I couldn’t get a particularly good picture of the caramel so I apologize. To make place your sugar and water into a heavy bottomed pan and boil on medium-low heat until the color is a uniform sort of chestnut brown, any darker and it’s burned. Then add your butter, it’s going to fizz a little but don’t be alarmed just keep stirring it off the heat. You can add your salt in now if you’re using any.
Working extremely quickly pour your caramel over your popcorn/peanut mixture and stir in vigorously. Turn out onto a silicone mat lined baking tray and leave to cool for a few minutes before breaking it up to serve.
