Here's how you can make your own budget-friendly lemon pesto. No pricey pine nuts required!

You Will Need (8 things)

  • 1 cup packed Basil Leaves
  • Juice and zest of 1/2 a Lemon
  • 4 tbsp Olive Oil
  • 2 Raw Garlic Cloves
  • Food Processor
  • Roasted Almonds (skins on)
  • Salt (to taste)
  • Pepper (to taste)

Steps (4 steps, 15 minutes)

    Toast almonds on a baking sheet at 350° until lightly toasted and aromatic.

    Pulse together almonds, basil, lemon juice and zest, olive oil, and garlic in food processor. Scrape down sides of processor periodically, until mixture is smooth.

    Add salt and pepper to taste. Pulse to incorporate.

    To freeze in individual servings (each serving is enough to flavour a pasta sauce for 2-4 people), line an ice cube tray with plastic wrap. Freeze pesto in the ice cube tray. Once frozen, wrap and label each serving and keep frozen until ready to cook.
