I love granola but the shop-bought stuff never has enough nuts for my liking and can often be super sugary, so I decided to make my own with plenty of nuts and maple syrup for sweetness.

Gently crush or chop your nuts.
Roast the oats and nuts in a pan, without any oil, until they begin to turn golden.
Stir in the butter, maple syrup and spices and roast for another couple of minutes. Make sure you don't over overcook the granola or it will begin to burn.
Keep in an air-tight jar for up to two weeks... though it's so more-ish that unlikely to last that long.
