It’s S’More season! I’m not sure if I’ve ever explained the miracle of s’more season to any of you so allow me to do so now. Basically there are individuals in this world that believe that it’s important to be fit so that they can look good in the swimsuit of their choice. I follow this example with one glaring caviat, I don’t get fit to look good in a bathing suit I look good so that I can eat as many s’mores as I want and come to a net zero by the end of summer. Now it’s been summer for a while here in Texas, but s’more season exists in the perfect situational moments of camping on long moonlit summer nights and last minute shindigs with friends who actually thought to bring metal hangars and jet puffed marshmallows.

Cream your butter and sugar together until well combined. Add in your vanilla, honey and milk making a huge mess and mix until smooth. In a separate bowl mix your dry ingredients together.
Mix your dry into your wet and roll into two four inch disks then chill for about two hours in plastic wrap. You can leave these for up to 24 hours if you need to so no need to stress about a time table.
Preheat your oven to 350 and line a large baking pan with parchment paper or a silicone mat. Roll your dough out onto a lightly floured work surface until about 1/8th of an inch and cut into equivalently sized squares.Place your cookies on your mat and cook for 10 minutes, then remove from the heat and allow to sit on the pan for five or so extra minutes before transferring to a wire rack to cool completely.
