Soak your dates in boiling water in a jug (15mins) and pre heat the oven to gas mark 4 or 5. Line a large baking tray with baking paper ready.
In a large bowl, put your porridge oats, fruit & nut mix, almonds, milled linseed, your spices and mix well.
When your dates have soaked, drain and reserve the water. Put the dates in a blender with the butter and reserved date water and blend it till smooth (for me it looked like butter consistency). Add this mix to your dry mixture in your bowl and mix well
spread on your baking tray and break it up a little. Bake for 15 minutes, check it and break it up a little more. Bake for another 10-15 minutes or until golden brown. Make sure that the fruit in it hasn't burnt.
when its cooked leave to cool and mix in the coconut flakes and put it in a container with an air tight lid. Use for cereal or add it to your smoothie bowls
