Perfect breakfast or brunch meal, but ill be host I've eaten then for lunch and dinner before aswell.
Getting the ham base from the muffin tin can be tricky sometimes, be sure to steer clear of shaved ham as its to thin to use and gets caught to the bottom of the tin

You Will Need (8 things)
- 50 g Baby Spinach Shredded
- 1 cup Light, shredded Cheddar Cheese
- 100 g Double smoked Ham
- Olive Oil Spray
- 6 Egg(s)
- 6 Bread Slices
- 3 tsp Butter
- Tomato Chutney To serve

Preheat oven to 200°C. Spray six large muffin pans with olive oil spray to lightly grease. Line the base of each pan with 2 ham slices.

Divide the spinach and cheddar evenly among the pans. Crack an egg into each pan. Season with salt and pepper.

Spread each slice of bread with butter. Use a round pastry cutter to cut 1 disc from each bread slice. Place a bread slice, butter-side down, on top of each egg. Bake for 8 minutes or until egg is set and bread is golden. Run a small knife around the inside edge of each pan. Turn pies out onto a baking tray.

Preheat grill on high. Cook under grill for 2 minutes or until the ham is crisp. Top with chutney. Serve
