Halloumi with cherry tomato sauce
A simple dish that can be a starter, a light lunch or part of a larger meal

Halloumi is a very versatile cheese and unusual in that it can be fried yet hold its shape. It pairs perfectly with tomatoes. This dish makes a delicious starter or snack, or can be served with bread and salad as a main meal.

You Will Need (6 things)
- 250 g Halloumi
- 250 g halved Cherry Tomatoes
- 1 tsp Ground Cumin
- 1 tbsp Olive Oil
- Salt and Pepper
- Cooking Oil for frying

Heat the oven to 180C, 350F, gas mark 4. Place the tomatoes in a bowl and toss with the olive oil, ground cumin and seasoning and then arrange them, cut side up, in a baking dish. Bake in the pre-heated oven for 30 minutes.

Cut the halloumi cheese into 8 fingers. A few minutes before the tomatoes are due to be ready, fry in a wide, shallow pan for about 3 minutes each side, until golden.

Place two pieces of fried cheese on each plate and spoon a quarter of the baked tomatoes over each. Serve immediately
