Another of my dinners for two---that's all I ever cook! I found out that ground turkey is a leaner, lighter alternative to ground beef that can be just as good and flavorful if it is prepared right. I feel healthier eating it, although I admit in this recipe I sort of ruined that with the bacon and spice.
Another of my dinners for two---that's all I ever cook! I found out that ground turkey is a leaner, lighter alternative to ground beef that can be just as good and flavorful if it is prepared right. Assemble your ingredients! 2 bell peppers 1 white or yellow onion 1 lb. ground turkey grated cheese bacon bits lemon juice cajun seasoning old bay ground pepper bread crumbs kosher salt worcestershire I don't normally use quite so many seasonings, but since turkey is bland compared to beef I spiced it up.
Peel and chop your onion. Wash the peppers, cut off the tops, and scrape out the seeds and innards! If you want, boil them briefly in salted water.
Mix together the ground turkey, chopped onion, and seasonings. Add a splash of lemon juice and two of worcestershire and mix some more. This works best if done by hand although it is a bit yicky.
Stuff hollow peppers with turkey mixture.
Top with bacon bits and grated cheese, place in foil lined baking dish, and bake at 350 degrees for 45 minutes.
Remove from oven, let cool for a few minutes (those little mamas will be piping hot inside!), and enjoy! (Iced tea is my beverage of choice if you haven't noticed, lol.)
