This is without a doubt one of our favorite side dishes. We serve it most often with Roast Beef, or Mexican food, and it is perfect with either. Here's what it is: Rice (brown or white), combined with sour cream, green chilis and cheese; delicious, cheesy perfection.
This is without a doubt one of our favorite side dishes. We serve it most often with Roast Beef, or Mexican food, and it is perfect with either. Here's what it is: Rice (brown or white), combined with sour cream, green chilis and cheese; delicious, cheesy perfection.
In a bowl of hot rice, mix in butter and salt and pepper. (If you are using cold rice, melt the butter separately, and then pour over rice and mix well).
Stir in Green chills and mix to blend.
Add Sour Cream and mix thoroughly.
Now add all but 1 cup of the cheese. Mix well and place in a 9 inch casserole dish.
Top with remaining Cheese.
Bake at 350 degrees for approximately 30 minutes, or until rice is bubbly, and just turning slightly brown. Enjoy!
