We had leftover beef but it can be done with any meat, prepared or otherwise
IMPORTANT NOTE: If your meat is raw, such as chicken breast, cook it until done before adding the rest. Make sure there is still an adequate amount of oil left, and it is not scorched. If the meat is already cooked (i.e. leftovers), add it at the same time as the Stage 1 veggies. If you are using tofu, fry it golden in the olive oil first, then remove from pan and let it rest on paper towels. Add it back in with the Stage 3 veggies. Chickpeas etc. can be added at Stage 3.
Heat olive oil on medium-high until it is runny. Add the Stage 1 veggies. (See note about meat.) Stir every minute or so until the garlic starts to look toasty and the onions start to cook, about 4 or 5 minutes. It should smell really good.
Add Stage 2 veggies. Stir. Add the cooking wine and the Greek seasoning. Cook for another 2-3 minutes, stirring every minute or so.
When the asparagus stems are starting to be just a bit tender, add the Stage 3 veggies and the beef stock. Cook for about 3 minutes until everything is tender. Serve on a bed of white rice or your choice of pasta noodles, and top with feta cheese. Enjoy!
