Crunchy cookies filled with oats and granola.
The granola in the cookies caramelises while in the oven to make them extra crunchy and sticky.
Makes roughly 20 cookies!

Step 1Whisk together the brown sugar, vegetable oil, and vanilla.

Step 2Beat in the egg.

Step 3Whisk together the flour, baking soda and cinnamon and then add to the oil mix.

Step 4Mix in the granola and oats.

Step 5Cover a cookie sheet with baking paper and compact the mixture into small cookie circles, placing them on the baking sheet.

Step 6Bake for 15 minutes at 180'C.
