Add the potatoes to a hot pan with a little oil, add the garlic then stir for a minute then add the leeks. c Next add the bullion powder then hot water. I added about 2 pints cause I like my soups thin but add less if you like yours thick. Lower the heat then simmer for 20 minutes. When the leeks and potatoes are soft, blend with a hand blender or food processor.
