Because my daughter has high-functioning autism, I try to buy or make as many gluten-free products as possible (less cow milk products too). This is a variation of a muffin recipe, because we don't have a stove (yet) and my toaster oven is very small!

Description

Because my daughter has high-functioning autism, I try to buy or make as many gluten-free products as possible (less cow milk products too). This is a variation of a muffin recipe, because we don't have a stove (yet) and my toaster oven is very small!

Instructions

  1. Preheat your (toaster) oven to 425 degrees F---because my Chefmate goes by 80 and 150 degree increments, I guessed!

  2. Lightly grease a small loaf pan---I used Land O'Lakes Butter that I obtained from Dollar Tree!! Everything is truly one dollar.

  3. In a mixing bowl (also purchased from Dollar Tree), place all the ingredients and mix well. I purchased ALL the products, except for the white rice flour, from Dollar Tree (yes, even the eggs---where I live, they have a frozen and dairy section). The total for the ingredients (per amount used) 75 cents (sans the flour= $1.15). And all the ingredients can be used for other projects/recipes. The Bob's Red Mill White Rice Flour I obtained from Sunfresh, which was approximately $3.25 for 24 oz/680 gram bag.

  4. The reason why I substituted some of the sugar for Sun Crystals is because I had some left over and wanted to use them, and I wanted to see if it would make it taste too bitter, etc. I left out the salt in my recipe, because frankly, I don't have any in the house (normally don't use it in my cooking)

  5. Pour into small loaf pan---you can purchase from Dollar Tree as well! Bake for approximately 23-25 minutes. I had it in for 20 minutes, but that wasn't enough for the middle section, so I put it in for longer.

  6. I allowed it to cool for approximately 5 minutes, then took it out, and I'm now enjoying it alone (no bitter aftertaste!) or I think I'm going to put PB or strawberry Preserves on it.
