Heat oven 355/180 degrees. Whisk together eggs & sugar until pale, light & fluffy (10 mins)
Sift flour & ginger together 3 times. Fold into the egg mixture
Fold in the water & butter.
Pour into a tin. Bake 20 mins until cooked through
Sandwich the cake together with jam & cream. Sprinkle with icing sugar.
Cut & serve.
