Gin & Tonic Truffles

Gin & lemon infused chocolate truffles with popping candy!

Makes 20 truffles.

These gin & tonic inspired truffles have a Love.Gin infused dark chocolate center and are coated in lemon flavoured white chocolate and popping candy for a treat that's sure to win over your Valentine.

You Will Need (7 things)

  • 200 g Icing Sugar
  • 150 g Unsalted Butter
  • 1 oz Eden Brewery's Love. Gin
  • 200 White Chocolate
  • 2 tbsp Cocoa plus more to dust
  • Popping Candy
  • 2 tsp Lemon Flavouring

Steps (6 steps, 45 minutes)

    Crumble together the butter and icing sugar until combined.

    Stir in the cocoa and gin. The mixture will become smooth but make sure it doesn't get too runny.

    Cover a baking tray with parchment paper and fill a bowl with cocoa. Use a spoon to roll the mixture into 20 small balls and roll each in cocoa before placing on the tray.

    Place in the fridge to chill for a couple of hours.

    Melt the white chocolate and stir in the lemon juice.

    Coat each of the truffle in white chocolate, return to the tray and sprinkle with popping candy. Leave to harden and then box up!
