Gin & Tonic Sandwich Biscuits

Biscuits with a twist, enjoy a gin & tonic as a delicious sandwich biscuit!

You Will Need (9 things)

  • 128 g Flour
  • 50 g Sugar
  • 50 g Icing Sugar
  • 1 pinch Salt
  • 1 Lemon
  • 100 g Butter
  • 3 oz Beckett's Gin
  • Filling of choice - lemon curd and lime marmalade work well
  • Writing Icing to decorate

Steps (10 steps, 35 minutes)

    Whisk together the flour, sugar, icing sugar and salt.

    Grate in the zest from the lemon.

  3. 3

    Cut in the butter. Squeeze in the juice from the lemon and add the gin.

    Knead into a thick dough.

    Roll out the dough.

    Cut out the cookies with a cookie cutter.

  7. 7

    Use a chopstick to add a decorative edge around the outside of the cookies.

    Bake at 180'C for 15 minutes, leave to cool and then spread one cookie with your filling of choice and place a second cookie on top.

    Decorate with writing icing.

    Serve in a teacup!
