You Will Need (15 things)

  • 250 g Plain Flour
  • 85 g Ground Almonds
  • 2 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • 1 tsp Baking Powder
  • Bicarbonate Of Soda / Baking Soda (Half a tsp)
  • 1 pinch Ground Cloves
  • 1 pinch Grated Nutmeg
  • 1 pinch Black Pepper
  • 200 ml Clear Honey
  • 85 g Butter
  • 1 Lemon Finely grated zest
  • 100 g Icing Sugar (for icing)
  • 250 g Plain Chocolate (instead of icing)
  • 1 Egg(s) White Beaten (for icing)

Steps (12 steps, 10 minutes)

  1. 1

Tip the dry ingredients into a large bowl.

  2. 2

Heat the honey and butter in a pan over a low heat until the butter melts.

  3. 3

Then pour into the flour mixture along with the lemon zest.

  4. 4

Mix well until the dough is combined and fairly solid. Cover and leave to cool.

  5. 5

    Heat oven to 180C/fan160C/gas 4.

  6. 6

Using your hands, roll dough into about 30 balls, each 3cm wide, then flatten each one slightly into a disk. (kinda like this pic but your dough should be a different colour.)

  7. 7

Bake for 10mins, then cool on a wire rack. No, not that cat, the dough!!! lol sorry couldn't resist :D

  8. 8

Divide the biscuits between two baking trays lined with baking parchment, leaving room for them to expand. (Same as above: your should be a different colour than in pic.)

  9. 9

To ice the biscuits, mix together the icing sugar, egg white and 1-2 tbsp water to form a smooth, runny icing.

  10. 10

Dip the top of each biscuit in the icing and spread with the back of a knife.

  11. 11

Alternatively you can melt some chocolate and cover the top of them in chocolate instead. Both taste equally nice:D

  12. 12

Hope that was easy to follow and that you now have the finished Lebkuchen. The best bit is they even smell really chrissmassy!
