Rinse the tomatoes, take off the stems
Peel garlic clove and shallot
Rinse the pepper, remove seeds and chop coarsely
Peel the cucumber and ensure that there is no skin
Marinate all ingredients except sherry vinegar and barra bread in a bowl for 30 minutes
In a Vitamix place the marinated ingredients and puree until smooth · Slowly drizzle the olive oil and sherry vinegar
Refrigerate for 4 hours for best results
Garnish with buttered croutons, small diced cucumbers and cherry tomato rings
