Combine ingredients in a mixing glass and fill with ice. Cap with a shaker tin and shake well until cold. Strain into a coupe or cocktail glass. Float the garinsh over the top of the drink and serve.
Recipe for honey-lavender syrup: Combine honey and water in a small saucepan and place on the stove on medium heat. Stir occasionally to avoid caramelizing the honey on the bottom of the pan. Bring near a boil and season with salt (a thin white film should be developing on the surface of the syrup). Remove from heat allow to cool to room temperature. Transfer to a 2 quart mason jar and add lavender. Give it a few shakes before storing in the refrigerator over night. Strain the lavender off the syrup the next day before resealing and storing in the refrigerator. Should last at least a month.
