These colorful funfetti cookie sandwiches are not only easy to make, they are also yummy to eat!
Step 1: Preheat oven to 350 degrees. Step 2: In a large bowl, mix together the cake mix, oil and eggs until smooth. Step 3: Drop 1 tbsp of dough at a time onto a non-stick cookie sheet. Step 4: Flour the bottom of a glass and flatten cookie dough or use your hands to flatten. Step 5: Bake at 350 degrees for 5-7 minutes, until the bottom is light brown. Allow to cool. Step 6: Frost the bottom of half the cookies. Place the remaining cookies on top of the frosted cookies to make a sandwich. Roll the edges in rainbow sprinkles. Enjoy!
