These are very tasty. They are really impressive but a little care is needed when making them. You can fill them with any filling you fancy. I used vanilla buttercream, chocolate buttercream & peanut buttercream. You can also. Colour them different colours & you can add flavouring to them but these ones are just plain.

Whisk egg whites until holding soft peaks.
Add sugar gradually while still whisking. The eggs should be stiff & glossy.
Combine icing sugar & ground almonds together. Mix through.
Gradually fold in the almonds to the eggs.
Add the food colouring of your choice..
Pipe small circles of the mixture onto paper. Approx 1.5".
Leave to form a skin for approx 30 mins.
Bake at 160/325 degrees for 10-15 mins. When cooked, remove from the oven & allow to cool before removing from the tray.
Make up the filling... Combine icing sugar & butter. You could use store bought filling.
Pipe filling onto one macaroon & top with another of equal size.
Serve.
