You will need

Pastry
300 g Plain Flour 150 g Butter 50 g Icing Sugar 1 Egg 2-3 tsp Water
Filling
200 g Currants 75 g Sugar 50 g Butter 1 tsp Mixed Spice

Instructions

1. 

   Heat oven 355/180 degrees. Rub the flour & butter together until resembles bread crumbs.

2. 

   Add icing sugar. Stir through.

3. 

   Add egg & enough water to form a dough. Wrap in cling film & place in fridge for at least 30 mins.

4. 

   Filling... Mix ingredients together.

5. 

   Half the dough? Press into a tray.

6. 

   Pour in the filling.

7. 

   Place the other pastry on top.

8. 

   Prick the top of the pastry. Brush with egg or milk. Bake for 25-30 mins

9. 

   Sprinkle the top with sugar.

10. 

    Cut & serve.
