A quinoa, feta, spinach and sweetcorn filled savoury waffled topped with scrambled eggs, smoked salmon with cream cheese and chutney sprinkled with pumpkin seeds!

You Will Need (24 things)

  • For the waffles

  • 100 g Quinoa
  • 100 g Feta Cheese
  • 100 g Canned Spinach
  • 100 g Sweetcorn
  • 2 tsp Paprika
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 130 g Flour
  • 2 tsp Baking Soda
  • ¼ tsp Salt
  • 1 tbsp Vegetable Oil
  • 8 floz Soya Milk
  • 1 Egg
  • To top

  • 4 Eggs
  • 2 tbsp Mustard
  • 2 tsp Paprika
  • Cream Cheese
  • 4 tbsp Butter
  • 1 tbsp Rosemary
  • 4 sliced of Smoked Salmon
  • 4 tbsp Chutney
  • Pumpkin Seeds

Steps (8 steps, 25 minutes)

    Start by cooking the quinoa.

    When the quinoa is ready, drain the spinach and sweetcorn and stir into the quinoa with the crumbled feta cheese. Add the spices and season to taste with salt and pepper.

    Whisk together the flour, baking soda, salt, vegetable oil, soya milk and the egg.

    Mix the quinoa into the waffle batter and start cooking your first one on a waffle iron.

    Meanwhile scramble the eggs for the topping with mustard and paprika.

    At the same time, melt the butter with the rosemary.

    Place the waffle on a plate when cooked. You can either make one chunky waffle for everyone or a stack of two thinner ones with the batter.

    Top one third with scrambled egg and drizzle over the rosemary butter. Top another third with chutney and sprinkle with pumpkin seeds and top the final third with smoked salmon and a dollop of cream cheese.
