In case you hadn't noticed the rising prices of eggs lately, we're in a national egg shortage in the U.S. right now. Over 40 million egg laying hens have had to be destroyed due to bird flu. So if you love pancakes like I do, you're pretty much feeling the pinch in your wallet right now. Luckily, there are ways to get around eggs.
In case you hadn't noticed the rising prices of eggs lately, we're in a national egg shortage in the U.S. right now. Over 40 million egg laying hens have had to be destroyed due to bird flu. So if you love pancakes like I do, you're pretty much feeling the pinch in your wallet right now. Luckily, there are ways to get around eggs.
Start by pre-heating your griddle to 325 degrees. The worst thing you can do is not have a nice hot cook space.
Start with a cup and a half of flour.
Add a tablespoon of sugar
3 teaspoons of baking powder
and 1 teaspoon of salt.
Next add a 1/4 cup of luke warm water.
and 1 and 1/4th cup of milk. You can optionally use buttermilk. You can also option to add 3 tablespoons of melted butter to your mixture but I often find that it isn't necessary.
Mix your ingredients together well.
A thicker batter will get you thicker pancakes but they won't necessarily be light or fluffy. Remember you are making panCAKES so the batter should be thinner and even runnier to get you a lighter and fluffier batch.
Add your batter to your well heated griddle and flip when ready.
Resist the urge to flatten your pancakes down after flipping. When they are done, serve with your favorite toppings and enjoy!
