This is the ultimate comfort food in our house, pasta is my favourite food and how can you go wing when you add bacon and egg into the mix <3 it.

You will need

1 cup Finely grated Parmesan 1 cup Flat leaf Parsley Finely chopped 80 ml Extra Virgin Olive Oil 6 Rashers of Bacon 2 tbsp White Vinegar 1 Red long Chilli Very finely diced 4 Egg(s) 350 g Approx. Pasta

Instructions

1. Cook pasta as per directions on the back of the packet and then drain well.

2. As para is cook, add vinegar to another pot filled with water and bring to the boil over high heat. create a whirlpool by storing water with a spoon , Carefully crack egg into the centre of the and poach for 1-2 minutes for a soft egg. Remove and set aside. Cover loosely with foil to keep warm and then do the same with the remaining eggs.

3. Heat a large frying pan to medium heat. Add the bacon and cook, until crisp. Remove from heat. Add the oil and chilli spaghetti, parsley and parmesan, toss to mixed Divide the pasta between bowls. Top with a poached egg and eat.
