After seeing a ice cream thread on the boards by Charmander Rib Cage I was well and truely in the mood to make some of my own home-made ice cream, and here goes... I wanted to add some nice fruity flavours but didn't have any nice fruit in the house :( next time maybe :D

Add 300ml milk and 300ml cream to a saucepan and bring to the boil. Than take off the heat.
Add 6 egg yolks (you could save the whites for a meringue!) to 175g of caster sugar in a bowl and 1 tsp of vanilla essence (and a few extra drops for luck).
Whisk until pale in colour.
Add the milk and cream mixture then return to the saucepan on a low heat for 5 minutes until the mixture becomes a thick custard texture. Keep stirring otherwise it might curdle!
Leave to cool then put into a bowl then store in the fridge for half an hour.
Move from fridge to freezer. Then remove from freezer once the edges start to freeze and stir vigorously, then return to the freezer
Do this process again once the sides start to freeze again.
Then let freeze completely and enjoy :) Check out my Choc-Ice Balls how-to for more ways to serve!
