The pastry chefs at Teacup have modified their usual recipe to create these easy-to-bake scones, perfect for making with children over the summer holidays. Instructions

  1. Start by soaking your dried fruit to ensure it is nice and juicy. Place your fruit in a mug and cover with hot water (or freshly brewed tea if you prefer).

  2. In a large bowl use a wooden spoon to cream together the butter and sugar. Beat together until the mixture is white in colour and smooth. Add in the milk and baking powder, and crack in the egg. Mix together slowly, sifting in the flour a little at a time. Once all of the flour is added, knead the mixture together into a dough.

  3. Drain off the dried fruit, using a tea towel to make sure it is nice and dry, then add the fruit to the bowl and knead into the dough. Cover the bowl with a damp tea towel and leave to rise in a warm place for twenty minutes. Whilst you are waiting for the dough to rise, preheat the oven to 170ºc.

  4. Line a baking tray with baking parchment and set aside. Dust a work surface with flour, and tip out the risen dough. Using your hands, flatten out the dough until around 4cm deep, and push in any dried fruit that has made its way to the surface (this will stop it from burning in the oven). Use a cookie cutter or narrow rimmed glass to stamp out the scones, and place them on the baking tray. Brush the tops of the scones with a little beaten egg, and place towards the top of the oven.

  5. Bake at 170ºc for 12-15 minutes, or until well risen and golden brown. These scones are delicious served warm from the oven with a little jam and butter, or why not store them in an airtight container and take them with you for a teddy bear's picnic?
