Easy put together breakfast sandwiches with lots of bacon!
Preheat the oven to 350 degrees. Lay out a cupcake pan and two flat cookie sheets. Spray both with cooking spray.
Crack your eggs one at a time into each individual cupcake spot. Slice each english muffin in half and lay out on the first cookie sheet. Lay out all the bacon on the second cookie sheet.
Place all three cooking pans in the oven once it is heated. Put the english muffins on the bottom rack and the eggs and bacon on the top. Bake eggs, bacon, and english muffins for 15 minutes.
Shred the cheese while everything is baking. Remove all pans and let everything cool. Assemble sandwiches: start with the cheese on the bottom half of the english muffin, top with one egg, sprinkle with seasoning salt & pepper, and finish off with the bacon and the top of the english muffin.
Enjoy now or... Freeze for an hour on a cookie sheet, then wrap in tin foil and freeze in a ziploc bag. To reheat: microwave or use an oven to heat sandwiches, 1 minute 30 seconds in the microwave or 15 minutes at 350 degrees in the oven.
