Cut Out + Keep

Easy Biscotti

Why would you ever spend the money again when it's so easy to make yourself?

This recipe was surprisingly simple and easy to make. Honestly, the hardest part about this whole process is purely in the waiting and cutting. First, you bake the loaf for around a half hour until firm enough to cut without squishing, then bake the slices for 10mins per-side. That is the hardest part of the whole ordeal. Simple, right? I forgot to take a picture of the Biscotti after it was dipped, but it turned out great! I used the first recipe in the link, and used Craisins (dried, sweetened cranberries) instead of walnuts because my Step-dad can't eat nuts. Watch what size eggs you are using. The recipe called for 3. For large eggs, that will work. But for medium eggs, you will need 4. I used melting chocolates from Micheal's to dip the Biscotti. Each loaf produced a different amount of slices depending on how the bread baked (whether it was wider than the previous batch, or a bit crustier than the last). After 3 loaves I got around 62 slices, not counting the ends ( I ate those :D ). These make a great year-round gift!
