Simnel cake has been eaten since medieval times as both a rich, sweet treat and a symbolic ritual. The fruit cake is topped with eleven marzipan balls to represent the eleven apostles of Christ, minus Judas.

You Will Need (9 things)

  • 500 g Mixed Fruit
  • 100 g Mixed peel
  • 250 g Butter
  • 250 g Brown Sugar
  • 250 g Self-Raising Flour
  • 4 Eggs
  • 1 tsp Mixed Spice
  • 1 tsp Ginger
  • Marzipan

Steps (15 steps, 180 minutes)

    Heat oven 130 degrees.

    Cream butter & sugar together until pale.

    Add eggs.

    Mix well.

    Add flour & spices.

    Mix to combine.

    Mix in the fruit & mixed peel.

    Roll out a circle of marzipan the same size as the tin.

    Pour half the cake mixture into the tin.

    Place the marzipan on top of the cake.

    Place the remaining cake mixture on top of the marzipan.

    Bake for 2hrs 30 mins until cooked through.

    Remove from the oven & cool completely in the tin.

    Measure 11 pieces of marzipan approximately 20 g each.

    Roll the marzipan into balls

    Brush the top of the cake with jam.

    Place a slightly larger disk of marzipan on top.

    Place the balls of rolled marzipan around the edge of the cake.

    Place the cake under a hot grill for 1-2 mins until the balls of marzipan turn golden brown on top.

    Remove & cool for a few mins.
