I had so much zucchini left over from my garden this summer that I found this to be a great way of using it up. My hubby and children love these and they freeze well, so I freeze the extras and defrost for a quick breakfast snack on the run. And the loaves are great to give to family and friends. This recipe makes 24 muffins or 2 loaves of bread. In my case I only have 2-6ct muffin pans so end up making 12 muffins and 1 loaf. Hope you enjoy making and eating these as much as I do :)

Gather all ingredients. Preheat oven to 350 degrees.
Mix dry ingredients- flour, sugars, soda, powder, cinnamon and cocoa.
In another bowl beat eggs, add grated zucchini, oil and vanilla. Mix.
Add the dry ingredients to the wet bowl. Mix. Add chocolate chips.
Add batter to well greased muffin tins or line tins with paper. Or if using loaf pans add to greased pans. Bake muffins 15-20 minutes. Bake loafs 45-50 minutes. When done baking, cool on cooling rack. Enjoy!!!
