My kids love to watch Wow Wow Wubbzy...and they always talk about DoodleBerry Cake on the show. So I thought I would attmept to make one just for fun.

I figured someone had already tried it...so I searched the net. And I was so DISAPPOINTED at the recipes I found. They were nothing close to what I expected. So I rummaged around in my dessert recipes...read through them...and then came up with my own recipe.

I was very happy with how it turned out. We served Grapity Grape Juice with it...another Wubbzy favorite.

It may sound like alot of work...but its actually really simple.

You Will Need (9 things)

  • 12 oz Bag Frozen Mixed Berries (raspberries, blackberries, strawberries and blueberries)
  • French Vanilla Cake Mix (1 Box)
  • Egg(s)
  • 1/2 cup Vegetable Oil
  • Instant Vanilla Pudding Mix
  • 2 cup Powdered Sugar
  • 1/4 Cup Butter Or Margarine (Softened)
  • 1 tsp Almond Extract
  • 1/2 Cup Sugar (For Berries)

Steps (7 steps, 240 minutes)

    First off you will need to get your mixed berries syrupy. To do this...simply put your berries in a bowl...let them thaw (30 mins)...then take about 1/2 cup sugar and sprinkle on the berries. Every once in awhile stir them gently. In an hour or two you will have enough syrup for the cake.

    Hour or Two Later: Preheat oven to 350 degrees. Gather the rest of the ingredients for the cake. Seperate the berries from the syrup...make sure to reserve 2 Tbsp of berries for the icing...just set them aside. Pour the cake mix and vanilla pudding into a mixer. Now add your eggs (4), 1/2 cup oil and 3/4 cup berry syrup. Mix well. Now add the berries and mix again until its blended well.

    Grease and flour your pan of choice. You could use a bundt pan...9x13...2 9inch pans. Its up to you. I like the way bundts look...so thats what I chose.

    Pour your batter into the pan...and bake...
    Bundt pan...50-60 mins
    2 9inch pans...25-30 mins
    9x13 pan...roughly about 35 mins

    Test for doneness...

    Let the cake cool for about 10-15 mins...then try to flip it out. Now let it cool anywhere between 30 mins to an hour. Now you can make your icing...

    Gather the ingredients for the icing...

    Sift 2 cups powdered sugar into a mixing bowl...now add your 1/4 cup soft butter, 1 tsp almond extract and 2 tbsp mixed berries. Mix until blended well.

    Now ice your cake! My cake was still a tad warm when I did this...so some of the icing melted...but it was still awesome.
