Blondies inspired by a traditional Kentucky pie

I adore the mixture of chocolate and bourbon, I quite believe they are meant for each other. And I am really in love with the idea of Derby Pie, but with it's focus on walnuts and my husband's strong allergy to those, it's not something I can make in my house. I decided to take a blondie recipe and mix it with the counterparts of derby pie to make a nut free derby pie blondie.

What You'll Need
1/2 cup of butter, melted
1 cup of tightly packed dark brown sugar
1 egg, lightly beaten
1 teaspoon of vanilla
1 TBSP Kentucky Bourbon
1 teaspoon baking powder
Pinch of salt
1 cup of all-purpose flour
1 bag dark chocolate chips, split into 1/2 cup and cup (We use Hershey's)
1/4 Cup Fat Free Half and Half
2 TBSP Kentucky bourbon -

Preheat your oven to 350 Degree Fahrenheit. Butter and flour a 8" x 8" glass dish.

Melt 1/2 cup of butter in a mixing bowl in the microwave. Whisk together with the sugar.

Add the egg, bourbon, and vanilla, continuing to whisk until well mixed in.

Finally, add the baking soda, baking powder, and flour. Also add the small pinch of salt here.

Add the chocolate chips and place into the pan. Cook for 20-25 minutes or until a toothpick comes out clean.

While the blondies are cooking, melt the remaining chocolate chips.

Once the chocolate chips are melted, add in the cream and bourbon. Mix well until thick, allow to cool slightly. Pour over blondies.
